YOU WILL NEED: 1 box mix, 3 eggs, 1/3 cup melted butter or oil of choice, 1 cup of water. MUFFIN DIRECTIONS: Pre-heat oven to 350° F. Lightly grease 12 muffin cups (or use paper inserts). In a large bowl whisk melted butter (or oil) together with eggs and water. Add the contents of the dry mix packet, and whisk until only small lumps remain in batter. Divide batter evenly between 12 muffin cups. Bake for 20-25 minutes until golden brown and toothpick inserted comes out clean. Allow pan to cool 5-10 minutes before transferring muffins to a cooling rack. Once cool, store muffins in an air tight container. Bread - makes 1 loaf: Pre-heat oven to 350° F. Grease a 8" x 4" loaf pan. Follow preparation instructions for muffin recipe. Transfer batter to prepared loaf pan. Bake for 48-58 minutes, or until a toothpick inserted comes out clean. Allow pan to cool at least 10 minutes before removing loaf or serving. Try adding to your batter: 1/4 teaspoon ground cinnamon, nutmeg or cardamon, 3/4 cup fresh blueberries, 1/4 cup almonds, 1/4 cup shredded unsweetened coconut, or 1/3 cup of plain Greek yogurt (reduce water by 1/4 cup).
