KAL Chitosan is fiber derived from the nondigestible, aminopolysaccharide chitin in shellfish. Deacetylation is the process of removing acetyl groups from chitin. This enhances the activity of chitosan, making it more soluble in the stomach. Studies indicate that a diet rich in fiber may help reduce the transit time of foods in the digestive system, so less dietary fat and cholesterol are available to the system.
