When grilling, we suggest starting with a hot grill (around 400 deg) to get a good, quick sear on both sides. Then reduce heat and finish to your preferred doneness. Since this is a lean cut, cooking to medium rare will help preserve tenderness. Remove from grill before it reaches your desired temperature because it will continue to cook once off of heat. Remember grass-fed meats require less cooking time so watch your grill.
