Large, flat-shaped buffalo roast typically cut 2" to 2.5" thick from the chuck. It has a blade bone in it. This is an excellent, low cost, nutritious roast. It requires moist heat cooking to soften and tenderize. Robust buffalo flavor with some fat. It is best prepared in a crock pot cooked long, low, and slow.
