This is a smaller version of the porterhouse steak. It comes from the front of the short loin where the tenderloin is smaller. Therefore it has a small tenderloin on one side of the T-shaped bone. On the other side is a longer steak that becomes a New York strip steak if cut from the bone. The bone in this steak adds to its juiciness and flavor when grilled. It is 1" thick. Best grilled and served rare. U.S. raised grass-fed beef.
